Tea on a Rainy Day

IMG_2257There’s something about a cold, rainy October day that inspires me to want to make tea. The crisp air, grey skies, the sound of rain hitting against the window of my tearoom. All of this seems to come together and quiet the mind. Brewing tea seems to naturally follow.

Rain is not always ideal for tea. I can remember when I made my first trip to a tea farm, I was caught in a torrential downpour as I was climbing Jirisan, one of Korea’s oldest tea-producing regions. As I clamored towards a tea master’s home, I was told that no tea was being harvested that day. “Good tea,” the tea master informed me, “was not picked on rainy days.” Rather than witness tea picking and processing, the master sat me down and prepared for me a delicious cup of tea. Rainy days were, as it turned out, perfect days for enjoying tea.

IMG_2334As I sit in my tearoom, enjoying my forced sequestering due to inclement weather outside, I’m reminded of this early tea memory. Inspired, I set my large iron kettle to boil and pull forth a small, tea-filled celadon 香合 kōgō, itself a reproduction ancient Korean 고려/高麗 Goryeo period (918-1392) inlay celadon container.

4C87D024-9041-46AF-83E1-CC78E4BA6344Setting this aside with a cut bamboo teascoop, I put together a traditional set of 분청사기 buncheong-jagi tea ceramics: three small teacups, a side-handle teapot, and a 숙우 sookwoo. Like the rain outside my window, the there is a certain rhythm to the preparation of Korean tea.

IMG_2335First, water is brought to the perfect “ripeness”, indicated by it coming from an audible rolling boil to a quiet, energetic simmer. Once achieved, a small amount is scooped out from the kettle with a lacquered gourd.

7EA07296-CCFF-4ABA-BE67-AE9158C16694The lid of the teapot is removed and the hot water is transferred from the sookwoo into the teapot. As the teapot warms, I once again pour water into the sookwoo. I wait for a brief moment and then water is poured from teapot to teacups.

B9EDDEA1-F5AF-425E-8755-8EE3750012D1As the cups warm, I open the wide lid of the celadon kōgō and I carefully place the long, dark, wiry leaves of a semi-oxidized 발효차 balhyocha atop the concave side of the bamboo tea scoop.

08BEC89B-3688-4F44-9A1D-DAC6BA0E8ECAWith every inward action, I breathe in. With every outward action, I exhale out. As I reach down to the sookwoo, I exhale. I inhale as I lift it towards my center. With a drawn out exhalation, I pour the water into the teapot. I pause and inhale. As I set the sookwoo down, I exhale. As I draw the lid of the teapot inward towards me, I inhale, enjoying the warm, fleeting aroma of the balhyocha.

FCF370D5-0155-4C04-90DF-A733BD9B8930As I exhale, I gently place the small grey ceramic lid atop the opening of teapot. I wait and, as I do so, I hear the sound of rain growing louder. As the rhythm of the rain quickens, I bring each teacup towards me and empty the warm water from them. This, in turn, echoes the sound of water outside, bright and refreshing.

IMG_2341Once emptied and placed back onto the wooden tea table, I reach back to grasp the teapot, pouring its contents into the now vacant teacups.

54D34264-ED92-43FB-8775-ED6F6DAE888DLifting the lid from the teapot, I let the tea leaves cool, enjoying, yet again, their aroma, this time transformed by the passing of time and the sustained heat of their brewing.

6FDDCE99-5A86-46BA-841F-E787FF039F3CWith the sound of the storm keeping steady outside my window, I sit and quietly admire the color of the first steeping and the quietness of the boiling water as it once again reaches its perfect ripeness.

IMG_2339One steeping turns to two, two into a third, and then countless more. The rich amber hue of the first brew deepens with the second and continues to darken with the third and fourth. The earthy and organic notes of boiled chestnut and baked apples evolve into bright, high tones of raw honey and the sweet pith of roasted pumpkin, eventually quieting into a subtler and more elusive flavor akin to aromatic pine resin.

IMG_2336All said, I exhaust myself before I exhaust the tea and as the storm lifts, I empty the teapot to view the leaves, still warm and steaming. What were once thin, twisted spindles have since unfurled into uniformly russet leaves.

IMG_2337Like the storm that passed and the rain that presided over much of my day, the tea may be done, though its sweet memory and complex flavors still linger. I am left only to wait for another rainy day.

Bright Golden Leaves Collect in the Gutter

In Autumn, the deep emerald green of Summer wanes and fades in exchange for the umber, ocher and amber of Fall. Looking up into the canopy, gilded edges circle each fluttering leaf, and those which have since fallen gather like flecks of gold in the gutters and gullies of the broad city streets.

In the remaining heat of the day, a lone cicada calls out a solitary threnody to its fallen brethren until it, too, becomes a hollow shell, victim to the chill and the gusting winds. Yet, as seasons shift, not all is lost. Instead, as one moment fades, it transforms, and in this change, something new materializes. Fall’s resplendent colors emerge and encourage meditation.

Golden leaves inform my choice to bring out a bright yellow 黃泥 huáng ní (“yellow clay”) Yixing teapot. Similarly, I select a small leaf Taiwanese red tea, the initial aroma of which strikes a harmonious tone with the sweet, fleeting scent of decaying Fall leaves.

Sitting alone in my tearoom, a single grey Korean 분청사기 buncheong-jagi cup and 숙우 sookwoo (water-cooling vessel) accompany me. In the air hangs the warm scent of lingering incense and the rising steam from my boiling kettle. In this time, I give myself a moment to pause. So often do we forget to do this; to sit with the change we are constantly caught within.

Peering down at the small yellow teapot, I see this transformation embedded in the pores of its clay body. A subtle shift from gold to brown. Quiet marks upon its skin from every tea it’s ever steeped. A slow metamorphosis to maturation.

The soft glazed surfaces of cup and cooling vessel, crazed and crackled, too, bear the imprint of time. Once immaculate, the patterns laced upon them now look like the veiny remnants of decomposing leaves. In this there is beauty too.

Laying the tea leaves atop a scoop fashioned from old bamboo, they appear dormant, caught in hibernation.

Placed within the belly of the small teapot, they slowly begin to wake, releasing a faint aroma which is sugary and rose-like.

A quick steeping wakes them and they begin to writhe and unfurl. Poured out, the liqueur they produce is tawny and slick.

Decanted from sookwoo into the lone cup, I first savor the color, then the scent, and finally the taste.

Straightforward and satisfying, simple and sweet is the nature of this tea. As I drink, I am reminded of its origin; a gift from a friend years ago, procured from a farm tended by a group of Buddhist nuns. How in these years the flavors have changed. How in this time, the essence of this tea still remains.

The chattering of the iron kettle in my tearoom. The rustling of leaves outside my window. The final notes of incense passing as I continue to brew tea. A parade of clouds in a clear azure sky. The sharp chirping of a cricket off in the distance.

The Singular Moment for Fresh Tea

All year round I drink tea. Everyday. Often multiple times a day, and usually different varieties. As a tea collector and lover of aged teas, this means that much of what I drink is “old tea” (tea that is not fresh and is often older than a year, sometimes older than a decade. Often categorized as 老茶 lǎo chá (lit. “old tea”), such tea has a myriad of enjoyable flavors and characteristics that can only be found in aged teas, ranging from earthy to loamy, incense-like, with notes of dried fruit and spices. Their energy is soft, deep, and relaxing.

Even when I drink a “fresh” tea, I must recognize that they may be as fresh as they can be, having been picked and processed a month or two prior to me brewing them. As such, they are not really “new” (新茶 xīnchá, “new tea”), just very fresh. Even the most excellent 抹茶 matcha is aged for several months, picked in Spring and then stored away until Autumn when it is ground into a fine powder. So, when I do have the opportunity to enjoy a truly fresh tea, one that had been just picked and finished, the experience can be quite eye opening.

One such moment occurred this week when Roy, a dear friend, tea person and founder of New York Tea Society returned from a sourcing trip to China and Taiwan. Welcoming me into his home and tea space, he produced a cornucopia of teas, ranging from freshly-picked 普洱毛茶 Pǔ’ěr máochá (Puer “rough tea”) and minimally-produced 紅茶 hóngchá (“red tea”) from Yunnan, and fragrant oolong and baozhong teas from Taiwan.

First came the clean and clear flavors of a delicate 月光白 Yuèguāng Bái (“Moonlight White”) from 景谷 Jǐnggǔ, Yunnan. Its leaves, smooth and silvery in appearance, with a shimmering downy velvet enrobing a dark green interior. Once brewed, the flavor was bright and full, with a viscosity and freshness of crisp cucumber, honeysuckle, and sweet grass.

Following was a gorgeous 金芽滇紅 Jīn yá diān hóng (Yunnan “Golden bud” red tea), the leaves of which resembled the first tea, though with subsequent oxidation, had darkened and achieve a bright golden hue.

Placed into the large porcelain 蓋碗 gàiwǎn, their color shone like threads of gold.

Steeped for just a moment, the tea quickly revealed its qualities.

Once decanted, the result was a deep, rich amber liqueur. Much like the Yuèguāng Bái, the Jīn yá diān hóng exhibited the viscosity and freshness that is only found in very new tea.

However, through the light processing that involved sun-drying, oxidation, and a final “baking” of the leaves, the flavors were malty, akin to baked sweet potatoes and light caramel.

The day finished with two excellent máochá, one from Jǐnggǔ, the other from the famed growing region of 老班章 Lǎo Bān Zhāng. The first was a fresh-picked, lightly-processed 藤条毛茶 téng tiáo máochá.

Coming from a large leaf varietal found in Yunnan, the flavors it exhibited were dramatically different from the previous teas. Its flavor was crisp and grassy, with a satisfying juiciness.

In contrast, the final tea, a máochá from Lǎo Bān Zhāng, was more wild, its leaves exhibiting a wider range of colors and shapes, forms and sizes.

Once brewed, the flavors shifted from sweet to savory, gentle to astringent, straightforward to complex. Although not initially as pleasing to the palate, this pointed to a tea that would ultimately age better.

And, so, as we enjoyed tea together, we assessed how tea, which was only weeks old, may change over time. What was now sweet may with time fade. What now is bitter may mellow and reveal new levels of complexity. What energy exists in a new tea may dissipate over the years, settling, as all great tea does, to calm the mind and spirit when joined with friends or enjoyed in solitude.

A Tea Culture Grows in New York City

I am not a New Yorker. I’m a transplant. A Northern Californian relocated from his foggy climes to the urban jungle of New York City. I ride the subway. I see the rats (all of whom I rather enjoy the company of). Amidst the daily clamor, the concrete jumble, the yelling, the kicking, the screaming, I find peace. Eked-out by my motto of “take time to make time”, I have found my solace.

For those who know me, this takes many forms: cooking, exploring, music, meditation, tea. First and foremost, tea. Tea has saved me somehow. From the madness of a PhD candidacy to a vow of poverty, up through to my current life in New York City’s regular and daily “churn”, to simply sit with tea is “just enough”.

But to say I’ve done it alone is to ignore the countless people, places, and spaces that have supported my (and many other’s) cultivation. I’m taking about tea houses and their owners. The people who make it happen.

From the mercantile to the monkish, the tea merchant crisscrosses a vast expanse of ideological and psychological forms, creating along the way spaces dedicated to “their version” of “the Way”. No one is incorrect in their iteration, but each produces something purely their own.

Love them or leave them, what they do is (and will always be) difficult. Turning a tiny leaf into a mighty buck. Boiled water. Ceramic. Bamboo. Paper. Glass. Iron. Caffeine. The list goes on. Yet, I, too have been in their shoes, though only for a while.

To their tough travails I offer up this article, published today on Sprudge (itself, a coffee-centric publication). Even in this realm, tea (the second most consumed beverage worldwide) is a side note (though a noteworthy one).

My little guide to New York City’s tea houses is by no means complete. By no means extensive. Just a breath on the wind. But I hope it causes conversation. I hope it sparks pondering. This city is always evolving, and, currently, it holds some of the nation’s (dare I say the world’s) most interesting tea houses.

Tea After Meditation

Sometimes when I host a morning tea meditation no one comes. Sitting in an empty and quiet room, I still make tea. This, too, is a meditation. As the Korean Seon Buddhist monk and tea master Cho’ui mused in his 1830 茶神傳 Dashinjeon (“The Story of the Tea God”), “drinking tea by oneself is feeling the wonders of god”. Perhaps I was doing this.

Time passed slowly, the light crawled across the room, and the stick of incense burned down to dust. Afterwards, Lina, owner of Floating Mountain Tea House, arrived and opened her tea space. In the brief moment before customers came for tea, she treated me to a wonderful 野紅茶 yě hóngchá (“wild red tea”) from Wuyishan. Set upon a hand-carved teascoop made by master carver Ondrej Sedlak, the leaves looked wild, their twisting and curling shapes somewhere between a fine 岩茶 yánchá (“cliff tea”) and a feral tea.

To brew the tea, Lina selected a vintage drum-shaped Yixing teapot, upon which was inscribed the words of the Heart Sutra, something felt like the brewing of this tea was meant to become today’s true meditation.

Tea between two friends began at a leisurely pace. The tea was placed into the teapot. Water was added.

A brief moment to pause.

Afterwards, water was poured over the little vessel.

Tea was brewed. Time passed.

Decanted into two cups, the leaves were left to rest. Their warm, sweet fragrance could be detected rising from the open teapot.

Two cups sat side-by-side as did two friends on a Sunday after a silent meditation. The flavor of the tea was simple and satisfying. A balance of what tasted like baked apples, incense wood, and dark honey. Flavors not found in one particular tea of this region but, rather, something that could only arise from a wild plant. The exquisite and unexpected.

Love and Parinirvana

February is a transformative month. It begins with the lunar new year, followed by the loosening of Winter’s grip and shift into the earliest moments of Spring.

On the 14th, lovers everywhere celebrate their amorous bonds with Valentines Day. While on the 15th, Buddhists worldwide observe Parinirvana Day, marking the death of the historical Buddha and the dissolving of his karmic bonds as he achieved nirvana.

The two days’ juxtaposition offers an intriguing meditation, one that perhaps calls into question the nature of love and the process of self realization. Tea, in a sense, offers this same consideration.

On the morning that sits between both days, I opt to brew an elegant 紅茶 hóngchá (“red tea”) gifted to me by a friend using a traditional Chinese wedding tea set.

Made of eggshell-thin porcelain, and hand-painted in vibrant colors, the distinctively-shaped teapot and its paired two cups are covered in an array of auspicious symbols meant to ensure prosperity and the happiness of lovers.

Red bats surrounding a stylized character for longevity (壽 shòu) carry with them a hidden rebus, as the word for “bat” in Chinese (蝠 ) is a homonym for “luck” (福 ). With the four bats arranged around the stylized symbol 壽 shòu, the character becomes a fifth bat. This, in turn, contains yet another rebus, 五福 wǔfú, “Five Blessings”.

Used in conjunction with a traditional marriage ceremony, the tea objects and the symbols they contain, are meant as a silent, visual invocation to deepen the connection between two lovers.

Used in the context of today’s reflection on the meaning of parinirvana, it is a wish for all beings to become free from suffering.

With one motion, tea can bring us together, and, through another, it can dismantle the ego. As a subtle art and mindful practice, the action of making tea can become a means to relocate the self in action. Through the observance and appreciation of its taste, we can enjoy its refinement and humble nature. To take a moment for tea is to take a moment for one’s self. To offer tea to a friend or lover is to open one’s heart.

In a way, the offering of tea is a form of death. The moment comes and goes. What was initially there in the beginning has now changed. What was once a living plant has been dried, then rehydrated and brewed. Once fully steeped, a tea leaf is as empty of a body as we will ultimately become with our own inevitable death. What remains is just a memory, of the flavor of tea and of life, and hopefully of love.

Echoes of the New Year’s Bell

In Seoul’s 종로 Jongno district, as the clock strikes midnight to herald New Year’s day, crowds cheer, friends embrace, and (in modern times) fireworks explode in the sky above. Years ago, during my first visit to Korea, I witnessed this first-hand. Today, years later, and days after the bells rang in the 보신각 Bosingak bell pavilion (the bell of which gives Jongno it’s name, which literally means “bell street”), I woke with the faint echoes of it ringing in my ears.

The biting cold of a Korean winter drives all into the warmth of their homes and, for some, into the comfortable climes of a teahouse. My first journey to Korea was marked by much of this, darting through the tight alleyways of Insadong, discovering Korean tea, in all its depth and diversity, for what seemed to be the first time.

Recalling this today, I sit down to brew cup after cup of one of Korea’s more unusual teas: 발효차 balhyocha.

Grown amongst the shaded groves of bamboo in 지리산 Jirisan, the tea is semi-wild. Its leaves, when viewed, appear as a tangled assemblage, dark and curling.

Having been left to dry and then rehydrate with the morning dew, the leaves were left to partially ferment during the final processing stages, resulting in the tea’s uniquely chocolate-like aroma and flavor.

It has been almost a decade since I last had this tea.

Left to sit in the warm interior of my grey-colored 분청사기 buncheong-jagi teapot, this distinctive scent fills the air of my tearoom.

Instantly, memories begin to flood my mind.

Set to brew for only a moment, I pour-out the amber-hued liqueur into the waiting sookwoo (of which I atypically use as a serving vessel). From there, each cup is served.

Three small vessels. Three precious jewels. With each sip, the echoes of 108 strikes of the bell. Savoring the new year.

Ripening Gourds in a Cold Field

October has come and nearly passed. The last day of the month always stands as a liminal period, a two-faced Janus looking to the future and to the past. What moments will the new month bring? What did we learn from the old month, now a not-so-distant memory? Walking through life on this blade cutting through time, one cannot help but to feel a rush.

Even in the quietude of the tearoom, this energy can be quite the stimulus to creation.

Selecting a small antique Japanese Meiji-period 古染付け ko-sometsuke (“old blue-and-white” porcelain ware) teapot modestly-adorned with a curling vine and gourd motif, I pair the little pot with a 紅茶 hóngchá (“red tea”) from Wuyishan. Opting to enjoy the warmth of an antique Japanese 茶釜 chagama (iron lidded kettle), I decide to use a water dipper fashioned from a lacquered gourd to pour boiling water into the tea vessel.

With the sound of a gentle wind outside my window and the soft gurgling of the kettle rising, I sit to brew tea. Waiting for the leaves to steep, I allow my eyes to drift and view the changing colors of the leaves outside.

A mild Autumn produces an array of hues. Dappled patterns on the tree tops outside and weathered markings on the surface of my old wooden tea table.

The color of tea when poured becomes the most brilliant tone to be seen. As red as a ripened gourd sitting in a field on a cold and foggy morning. How it captures the light of the sun.

Time captures moments like this as if it were a crystalline vessel. Tiny vignettes and faceted memories stored within. Tea, too, acts this way. Poems on a tea scoop recounting conversations between a traveler and a mountain hermit. Residue from past teas brewed clinging to bright white porcelain. Withered tea leaves hinting at the warmth of the Sun from a Spring years ago.

The gourd ladle tilted atop a hand-cut bamboo 蓋置き futa-oki (lid rest) dries after the tea has long-since brewed-out. The teapot sits partially open to cool. The scent of tea faint now when it was once readily present. A month comes softly to a close.

EXCLUSIVE: All About Yixing & Chaozhou Teapots

All About Yixing & Chaozhou Tea

Dear Beloved Blog Readers,

I have been on the road (and in the air) for much of August. Now back on terra firma I final have a brief moment to catch my breath and add more delicious video content from a Summer’s worth of tea talks and interactive workshops. So, without further ado, I present to you “All About Yixing & Chaozhou Teapots”.

As with previous tea talks (uploaded to this blog and those still pending), “All About Yixing & Chaozhou Teapots” delves deep into the singular and diverse topic of China’s most famous ceramic ware for the brewing of tea. Prized since the Ming period, Yixing teaware became the hallmark of quality and refinement for any 茶人 (chá rén, “tea person”) from the Ming up to this very day. Conversely, Chaozhou teapots have remained relatively unknown outside of the region of Chaozhou until relatively recently. In this event and live broadcast, we explore the historical and creative interplay of the two as they developed over time in conjunction with the history of tea and tea culture in China. Additionally, we went deep into the qualities that define teapot construction and functionality, and offered insights into sourcing, selecting, seasoning, and brewing with both unique teapot styles.

As part of an ongoing series that examines the diversity of China’s tea culture, “All About Yixing & Chaozhou Teapots” was  a fully-immersive workshop and tea talk, featuring tea tasting, discussions and education on art history, and offered hands-on opportunities to brew tea and hone teapot brewing skills. Participants were encouraged to ask questions, taste tea, and bring their own teapots to use and share.

I’m excited to share the full video of Wednesday, July, 18th’s tea talk and interactive workshop “History in a Bowl of Tea: Tea in the Ming and Qing Period” (1368-1912). Held at Floating Mountain Tea House in Manhattan’s Upper West Side, this event is part three of an ongoing series covering the history of tea, from its development as a folk medicine over 6000 years ago into the beverage we love today.

In this event, we discussed how the loose leaf teas have their origins in the monumental shifts that marked the period of the Ming in Qing, from experimentation in oxidation and pan-frying to inventive brewing techniques and international trade. We explored the impact scholars, poets, emperors, and artisans had on tea art and the development of gong fu cha (literally the “skill and challenge of brewing tea”). And we examined antique teawares from the Ming and Qing period and learn about the evolution of tea brewing, from teabowl to gaiwan to Yixing teapot.

This event included tea tastings of China’s famous teas accompanied by step-by-step demonstrations of Ming and Qing period tea preparation. Below, as a supplement to the almost three-hour long video, I’ve provided a listing of the contents of the presentation (featured in the first half of the lecture), as well as a list of the teas brewed (and how they were prepared).

2nd Tea: 水仙 Shuǐxiān “Water Immortal” Wuyi Mountain yancha oolong, Wuyishan, Fujian, China (brewed in a early 2000s fang-gu-shape Yixing teapot)

3rd Tea: 八仙 Bāxiān “Eight Immortals” Phoenix Mountain dan cong oolong, Chaozhou, Guangdong, China (brewed in a 1990s shui ping hu-shape Yixing teapot)

4th Tea: 正山小種 Zhèng shān xiǎo zhǒng, Lapsang Souchong, Wuyishan, Fujian, China (brewed in a contemporary Jun-yao-glazed teapot)

5th Tea: Charcoal-roasted 鐵觀音 Tiě guānyīn “Iron Goddess of Mercy” Anxi-style oolong, Nantou, Taiwan (brewed in 19th century-early 20th century Si Ting Hu-shape Yixing teapot)

6th Tea: 野生大葉白茶 Yěshēng dàyè báichá Wild “Big Leaf” White Tea, Fuding, Fujian, China (brewed in contemporary Qing-shape Jingdezhen white porcelain gaiwan)
